How to: Make "Puffy-Eggs" - Wild Puffball Mushrooms in Scrambled Eggs

Here is an easy and common way to fix up freshly harvested puffball mushrooms... 1C diced or minced Puffball Mushrooms (Calvatia gigantea, )
1/2 C diced green onions
1-2 pats of butter
3 eggs

1). Add pat of butter to a hot skillet

2). Break open eggs in a bowl, add mushrooms and scramble together vigorously

3). Once butter has melted in skillet scramble eggs into skillet...keep scrambling eggs to create soft and fluffy "curds"

4). Add a little of green onions, salt, pepper to taste...keep scrambling eggs while they cook. The key is to not over-cook scrambled eggs.

5). Once done, plate eggs, and garnish with more green onions.
